Salmon Piccata/Cinque Terre

The Dish: Salmon Piccata

Ingredients:
1 each 8 oz. fresh salmon fillet
1 lemon, fresh (juice)
2 Tbs. olive oil
2 oz. capers
1 1/2 oz. butter
1/4 cup white wine
Kosher salt and black pepper to taste

Method of Preparation:
- Put olive oil in a hot pan. When it starts to smoke, add the salmon fillet. Add Kosher salt and black pepper to taste. Let it sear for about 45 seconds.

- When it gets golden brown turn it over, add more salt and pepper and sear.

- Now, drain the oil from the pan, then add unsalted butter, chopped shallots, chopped garlic and sauté for 30 seconds or so.

- Next, add the capers, lemon juice and Chardonnay. Let it flame up, then finish in the oven at 400 degrees for about 5 minutes.

To Plate:
Put your favorite seasonal roasted veggies on a plate and place the salmon on top. Garnish with the capers and piccata sauce from the pan and finish off with some chopped parsley.

Serving suggestion: Vermentino
