Spaghetti Carbonara/Fascino's

The Dish: Spaghetti Carbonara


Ingredients:

1 Tbs. extra virgin olive oil

1/4 Spanish onion, diced

1/4 lb. pancetta (or bacon)

3 oz. mushrooms

2 oz. white wine

2 oz. green peas

2 cups heavy whipping cream

2 oz. unsalted butter

2 eggs

3 oz. Parmesan cheese

1 lb. spaghetti


Method of Preparation:

- First, put the spaghetti in boiling water. It takes about ten minutes to cook "al dente."

- Next, heat a pan and add extra virgin olive oil, pancetta (or bacon) and chopped Spanish onions. Sauté until the onions become translucent.

- Add mushrooms, white wine, salt, pepper, heavy cream and butter. Stir well. Add green peas and Parmesan cheese. Sauté and stir for a few more minutes.

- Next, add the cooked spaghetti and eggs and blend well. Sauté for another minute or so and it's ready to plate.


To Plate:

Plate in a shallow bowl, and garnish with bread crumbs and more Parmesan cheese.

Serving suggestion: Chardonnay
