Asian BBQ Lamb Ribs/Meat Market

Ingredients:
Lamb Rib Seasoning
6 lbs. lamb ribs
¾ cup kosher salt
½ cup garlic powder
½ cup Herbes de Provence
¼ cup red pepper flakes
½ cup chili powder
¼ cup smoked paprika

Lamb Rib Sauce
16 oz. hoisin sauce
½ cup rice wine vinegar
¼ cup mirin
1/3 cup sweet chili sauce
1 oz. sriracha
2 Tbs. soy sauce

For Frying
canola oil (to fill one-third of the pot)

Method of Preparation:

- In a bowl, mix kosher salt, garlic powder, Herbes de Provence, red pepper flakes, chili powder and smoked paprika. Sprinkle it on the lamb ribs and place in a pan for 2 to 4 hours in fridge. Then, add a small amount of water to the pan, cover with foil and let cook at 300 degrees for 3 hours depending on the thickness of the ribs.

- While the lamb is in the oven make the BBQ sauce. In a bowl add hoisin sauce, rice wine vinegar, sriracha chili paste, sweet chili sauce, mirin rice wine, and soy sauce. Mix well and set aside.

- When the ribs are done, place them on a sheet tray to cool in the fridge. Once the ribs are cold, section them into individual chops.

- In a pot, heat canola oil to 400 degrees and fry the individual lamb ribs for 5-7 minutes. Let them drain and then coat the ribs well with the Asian BBQ sauce.

To Plate:

Plate with Papaya Slaw, the lamb ribs and garnish with roasted peanuts.

Serving suggestion: Merlot
