Easter's almost here, that special time when kids bounce off the walls thanks to a candy-induced sugar high. Why let the little ones have all the fun? You can catch a holiday buzz at some Soflo watering holes with specialty drinks that are putting a brand-new spin on the words, "Easter eggs."

Easter? I'll drink to that. Three Miami mixologists have concocted cocktails with Easter in mind. The holiday staple connecting them all is, eggs.

First stop: The Bar at the Setai Miami Beach.

Philip Khandehrish: "So basically I decided to do a classic cocktail that involves egg whites to give that kind of connection to Easter."

The cocktail Philip came up with? The Rose Hip Whiskey Sour. It's orange peel-infused Scotch mixed with rose hip liqueur, citrus juice, simple syrup and an egg white. Then he puts a special shake on it.

Philip Khandehrish: "The technique that I'm gonna use to shake this cocktail is called the reverse dry shake."

That move emulsifies the egg white and gets it all fizzy and foamy. Phil pours it, shakes it again -- he does like to shake it -- and finally presents it in a chilled glass and topped with rose petals. It's even creamier than it seems.

Philip Khandehrish: "And that's the only reason why you use egg whites, is to bring in more of a body, it's so the drink's not as flat."

At Shikany in Wynwood, the Moonshine Clementine Ginger Fizz begins with a healthy dose of fresh carrot juice infused with ginger syrup. Then the fun starts.

Benjamin Goldman: "What we did is we took Smoky Moonshine that we bought at the liquor store and we infused it with none other than Peeps marshmallow. Peeps, which sort of scream Easter."

OK, so we've got drunk little chickens, a foam made from clementine juice and the egg is mixed up with the moonshine.

Benjamin Goldman: "We took egg whites and we took Triple Sec, we whipped it up with a little sugar and what we're left with is a fizz."

Top it with some shaved dulce, garnish with petit lettuce and sip your way to paradise.

Gabriele Selvi: "Buona sera, my name is Gabriele Selvi."

Over at Bocce Bar in Midtown, Gabriele Selvi is the chief thirst quencher. He created the Gin Olive Oil Fizz as a tribute to Easter and his homeland.

Gabriele Selvi: "So I was thinking that maybe a gin fizz with a full egg inside, with olive oil will be representing us the Italian version of Easter."

Take it from Gabriele. There's no reason to fear a cocktail made with olive oil.

Gabriele Selvi: "So your palette is gonna be moist and you can feel the olive oil on your tongue, but you cannot really feel it as a taste."

After giving a good shake to an egg white, a little olive oil and some fresh rosemary, gin, lemon juice and simple syrup are added. A little more shaking, and your Gin Olive Oil Fizz is born.
