We live in fast paced world that's why it's very important to slow it down, especially when it comes to food. This Friday night, we are once again celebrating a global movement in dining that honors restaurants who source their ingredients locally and respect the planet.

Fast food is so yesterday when it comes to eating, slow is definitely better.

Michele Benesch: "Slow Food is about sourcing locally bringing that food to the table and supporting the local farmers."

This Friday night at the Raleigh Hotel on South Beach, the hottest chefs in SoFlo will be coming together and cooking up a storm for Miami's freshest night out. This year's Snail of Approval grand tasting party honoring restaurants who source locally, buy organic and support local framers.

Chef Aaron Brooks: "It's going to be sensational. Flavor bomb that's what I'm bringing."

Julie Frans: "Come on into the garden."

Julie Frans who's restaurant Essensia in the Palms Hotel has its own organic garden.

David Braccha: "Oysters are rumored to be an aphrodisiac and I think that's part of our success."

Todd Erickson: "There's a nice mix of traditional and contemporary."

Todd Erickson from Haven and Huahaus Tacos, and SoFlo superstar restauranteur chef Michael Schwartz, who won the first Snail of Approval back in 2010.

Michael Schwartz: "It's great for Miami is that we get to focus and highlight the things that make Miami so great."
