Pasta lovers, rejoice. There's a new place in the 305 where your favorite food is made from scratch. Mondo Pasta has dishes like mama used to make. If your mama had her own pasta making machines. Mangia.

The thinking behind Mondo Pasta is simple. The Brickell eatery is dedicated to plating perfect Italian food.

Sebastian Grubissich: "We should show the customer that they can have a different dish than they usually have at an Italian restaurant."

The crucial first step in creating that difference pasta made on the spot.

Sebastian Grubissich: "We make all our pasta from scratch Fresh quality semolina. We use fresh whole eggs. We don't use beaten eggs or liquid eggs we use all the products we can get from the market. If we can get organic we get it."

You can watch Mondo's Pasta makers work three different machines to come up with your specific choice.

There's one to mix and roll the dough. One to turn it into different kinds of delectable delights. But the third machine is really special.

Sebastian Grubissich: "And then the other one which is our star it's an Argentinean machine, which is a ravioli machine, a ravioli-making machine which has the possibility of having two different sizes of ravioli."

After you pick your pasta and choose your sauce, you won't be waiting long to chow down on your order.

Sebastian Grubissich: "This pasta takes three minutes. Yes only three minutes because it's fresh pasta.'

Mondo offers up more than pasta. If you're in the mood for pizza, you got it. There's a variety of wines to choose from. They've even got homemade empanadas and a bunch of killer desserts to put on your plate. And speaking of those plates...

Sebastian Grubissich: "We're using biodegradable bamboo plates made out of bamboo starch. It's really eco-friendly that is a green product."

At Mondo Pasta, you get to fill your belly with freshness and do a solid for mother earth. Not a bad deal.

Sebastian Grubissich: "I mean people should experience this place."
