Rigatoni with Sausage/Thea Pizzeria & Cafe

The Dish: Rigatoni with Sausage & Sheep's Milk Ricotta

Ingredients:
16 oz. Rigatoni pasta
4 tbs. extra virgin olive oil
12 oz. Italian sausage
2 cloves garlic (flattened)
6 tbs. grated Parmesan cheese
8 basil leaves
6 cups tomato sauce
8 tbs. sheep's milk ricotta (or regular)
sea salt and pepper to taste

Method of Preparation:

- Put Rigatoni in a pot of salted water and bring it to a boil. Cook until almost al dente. (finish cooking in the pan later)

- Put olive oil in a pan and get it hot. Add bite-sized chunks of Italian sausage. When it's beginning to brown, add flattened garlic cloves along with sea salt, black pepper and fresh basil.

- Add tomato sauce (homemade or high quality) and simmer for three to four minutes. Add chopped basil and the cooked Rigatoni.

- Let it finish in the pan for another two or three minutes.

To Plate:

Dish the Rigatoni directly into a bowl and garnish with a dollop of sheep's milk ricotta, which you can find at specialty stores (or use regular Ricotta.) Top with Parmesan cheese, more fresh basil, a drizzle of extra-virgin olive oil and a dash of fresh black pepper.

Serving suggestion: Sangiovese
