When you think of stir fry, you think Chinese. But we’re heading to a Peruvian joint that is taking stir fry to a whole new delicious level. That’s what’s cooking tonight as we grab a Bite with Belkys.

The Chef: Diego Oka
The Restaurant: La Mar by Gastón Acurio inside the Mandarin Oriental Miami
The Dish: Lomo Saltado

Ingredients:
6 oz. beef tenderloin
2 oz. canola oil
2 oz. red onion
4 oz. plum tomato
1/4 tsp. garlic, chopped
2 oz. white vinegar
2 oz. soy sauce
1 oz. oyster sauce
1 oz. chicken stock thickened with potato starch
1 tbs. green onions, chopped
1 tsp. cilantro, chopped

Method of Preparation:
– Add canola oil to a hot wok- then add beef tenderloin and salt and let it flame up. Toss and sear the beef- then remove and set aside.

– Add more oil, then add red onions, peeled tomatoes and toss. Next, add a mix of garlic and ginger, return the beef to the wok and stir well. Add white vinegar, soy sauce and oyster sauce. Stir- and add chicken stock with a little potato starch. Finish tossing with chopped green onions and cilantro. In less than 5 minutes it’s ready!

To Plate:
In a bowl, put fried potato wedges, then the Lomo Saltado, and top it off with more fries and green onions. Serve with a side of white rice and Choclo- which is Peruvian corn.

Serving suggestion: Pisco Sour
