WSVN — Tomatoes aren’t just for salads or sauces when you do them up right, they can also make a main course meal. That’s what’s cooking tonight as we grab a Bite with Belkys.

The Restaurant: Beer 360 in Sunny Isles Beach
The Dish: Mount Eden Stuffed Tomato

Ingredients:
1 each, large steak tomato
3 lbs. chopped turkey breast (or your favorite meat) 1 lb Ricotta cheese
8 ozs. diced onions
4 ozs. chopped parsley
8 ozs. Parmesan cheese
salt and pepper to taste

Method of Preparation:
– Preheat oven to 400 degrees. Cut the top of a large, ripe beefsteak tomato. Run a knife around the edge and with an ice cream scoop, take out the center of the tomato. Set aside and make stuffing.

-Mix the chopped turkey, chopped onion, ricotta and parmesan cheeses, chopped parsley and salt and pepper in a large bowl. Blend until you get a pâté consistency.

-Fill the tomato with a generous portion of the stuffing. Top with Parmesan cheese and bake at 400 degrees for 10 minutes. When it’s golden brown, it’s done!

To Plate:
Let it cool, then plate all by itself.
