We have a recipe for a sweet treat that’s so good, you don’t have to make it just for dessert. It can be made as a main course. Time to grab a Bite with Belkys.

Ingredients:
For the Crêpes (makes 12)
1 cup water
2 cups organic buckwheat flour
1 cup milk
1 egg
1 pinch of salt
Savory Filling
1/4 cup boiled, chopped potatoes
1 egg each (for each crêpe)
1/2 cup swiss cheese
1 Tbs. heavy cream
2 strips bacon
garlic powder to taste
salt & pepper to taste
1 Tsp. paprika
1 Tbs. grapeseed oil
1/2 cup buckwheat batter (to make each crepe)
For the caramelized onions
1/4 cup red onion
1 Tbs. olive oil
1 Tbs. brown sugar
1/2 cup red wine

Method of Preparation
– Make a well in the middle of organic Buckwheat flour. Pour water into the middle and stir. Slowly add milk, starting from the middle to the outer rim- continuing to stir. Add an egg and continue to stir for about ten minutes. Add a little more milk and finish mixing by hand for another 5 minutes. It’s important to mix by hand because it allows air to get into the batter to make the crêpe fluffy. Cover the batter and let it sit in the refrigerator overnight.

– For the savory filling mix boiled, chopped potatoes with olive oil, garlic powder, pepper and paprika. Blend and sauté for about 20 minutes under golden brown.

– In another pan, add olive oil, red onion, brown sugar and red wine. Sauté for 45 minutes until the onions are caramelized.

– Oil a crêpe or regular flat pan with grapeseed oil. Pour on the Buckwheat batter and spread it into a circle. Add salt, pepper and an egg. Break the yoke and spread the egg around the crêpe.

– Continue building the crêpe by adding swiss cheese, a drizzle of heavy cream, bacon, the potatoes, and the caramelized onions. When the crêpe is golden brown on the bottom, fold it over and plate.

To Plate:
Plate with a mixed green salad and serve.

Serving suggestion: Hard Apple Cider
