If you’re planning a Superbowl bash, you’ll score big with a dish that’s full of flavor. That’s what’s on the menu tonight as we grab a Bite with Belkys.
The Chef: Miguel Aguilar
The Restaurant: Wynwood Kitchen and Bar in the Wynwood neighborhood of Miami
The Dish: Nachos Locos
Ingredients:
1lb. Mexican crumbled Chorizo sausage
3lbs. Chihuahua cheese
1 lb. Roasted corn
2.5 lbs. Pickled jalapeño, shallots, and fresno (see recipe below)
1 lb. Black Beans
3 lbs. Pico Verde (see recipe below)
2 bags corn tortillas (your favorite brand of chips)
In a large container, dissolve the sugar and salt in the white vinegar. Add the vegetables and let sit for a minimum of 48 hours. This will take most of the bite/heat out of peppers.
Pico Verde:
2½lbs. Tomatillos, small dice
½ lb. Red onion, small dice
2½ oz. Jalapeño, no seeds and small dice
½ cup Olive Oil
2 Limes, juiced
1 Tbsp. sugar
1 bunch Cilantro, rough chopped
Pickle Peppers:
1lb. sliced jalapenos (thin rings)
1lb. sliced fresnos (thin rings)
½ lb. sliced shallots (thing rings
1 Qt. White Vinegar
1 cup Sugar
1 cup Kosher salt
Method of Preparation:
– Put blended oil in a hot pan and add crumbled Mexican Chorizo sausage and cook for about 15 minutes. Smash it so it’s easier to separate later. When it’s done put it in a bowl and set aside.
-Next- Chef Miguel makes Pico Verde. Dice a tomatillo and a jalapeño with seeds out. Dice a red onion, cilantro and put the indredients in a mixing bowl. Add lime juice and olive oil. Stir well. Add sugar, pepper and kosher salt.
– Now- spray two pans with non-stick spray- then add the chips, roasted corn and Chihuahua cheese. Add the Pico Verde- building two identical sides. Add black beans to both pans and pickled jalapeño and fresno peppers, along with chopped shallots. Add another layer of cheese and finally, the chorizo.
– Put both trays in the oven at 350 degrees for 7-8 minutes. When the cheese melts- it’s ready to plate.
To Plate:
Chef Miguel pushes one layer onto a serving plate… and then pushes the other layer on top. He garnishes with some sour cream.
